Herbed Mayonnaise (make the day before)
1/4 c. mayonnaise
2 tbsp. dijon mustard
2 tsp. freshly chopped parsley
1 tsp. freshly chopped thyme
1 tsp. freshly chopped chives
1 tsp. freshly chopped capers
Mix all ingredients together and let sit overnight.

Make stuffing waffles:
4 cups leftover stuffing
2 eggs
broth as needed
1/3 cup cheddar cheese, shredded
Beat eggs and stir into stuffing along with the shredded cheese.
Oil up a waffle iron and waffle until crisp.

Assemble the sandwich:
1/4 cup herbed mayonnaise
3 stuffing waffles
1 cup gravy
3 oz. sliced leftover turkey
1/3 cup leftover mashed potatoes
1/4 cup cranberry sauce
3 strips of cooked bacon
arugula to taste
Spread herbed mayonnaise on two of the waffles.
In a medium sized pan, heat gravy over medium heat.
Place third waffle in the gravy and let gravy absorb. Flip and repeat on other side
On one of the mayonnaised waffles, lay down sliced turkey.
Top with cranberry sauce
Top that with gravy soaked waffle
Top gravy soaked waffle with bacon, mashed potatoes, salt and pepper, and arugula.
Top with final waffle, mayonnaise side down.
